Prior to fermentation principle fermentable sugars – D-fructose and D-glucose can be estimated. During fermentation acetic acid is monitored to detect Acetobacter sp infection. The falling levels of L-Malic acid and rising level of L-Lactic acid are monitored during malolactic fermentation.
Following fermentation many tests can be performed to determine the quality, stability and authenticity of the wine including acetic acid/D-fructose, D-glucose, D-fructose/D-glucose ratio, glycerol, D-lactic acid and L+D-malic acid.
