Studies have shown that not all phenolics have equal biological potency and antioxidant activity. 20% of TAS in a given wine sample is accounted for by the commonly measured phenolics listed below and these compounds correlate more strongly with TAS than any other components.
Total phenolic content correlates strongly with TAS in wine samples. The TAS portion unaccounted for by common phenolics can probably be attributed to complex polymeric phenolics which cannot be easily identified by laboratory methods.Â
